I have adapted this recipe from one by Teresa Cutter! I use recipes by her quite frequently and adapt them where need be! She is fantastic!
Homemade Muesli Bars
- 2 Cups Rolled Oats
- 1/4 cup goji Berries
- 1/4 cup sultanas
- 1/4 cup sunflower seeds and pepitas
- 1/4 cup honey (I don’t use quite this much)
- 1/4 cup olive oil (I don’t always use this much either)
- 3 eggs
- 1 tbsp. chia seeds
- 1 tsp. vanilla extract
- Dash of cinnamon
I just throw everything in together and mix until combined. Line a slice tin with baking paper. Spoon mixture into tin and level out. Place in the oven and cook for 15-20 minutes or until golden brown. When cooled cut into 12 -16 pieces.
